Lasagna Stuffed Chicken

Lasagna Stuffed Chicken is an easy and savory dish to make for dinner. As its name may suggest, this chicken is defined by a “lasagna stuffing”. It’s a crazy good mix of ricotta, parmesan, egg, Italian seasoning, salt and pepper. Chicken breasts are sliced in half, filled with lasagna stuffing, baked in the oven until cooked through and enjoy. They come out absolutely incredible!

The lasagna stuffing makes this chicken friendly to keto and low-carb diet. It blows the taste buds in your mouth while keeping you stick to your diet. How about chicken? It’s a rich source of protein but contains less carbs than other meats (beef, pork,…) Plus, this chicken is ready in an hour, 25 for preparing and 35 for baking. Ideal for any weekend’s meal.

Lasagna Stuffed Chicken

As its name may suggest, this chicken is defined by a “lasagna stuffing”. It’s a crazy good mix of ricotta, parmesan, egg, Italian seasoning, salt and pepper. Chicken breasts are sliced in half, filled with lasagna stuffing, baked in the oven until cooked through and enjoy.

Ingredients

  • 5 chicken breasts medium

  • 1 egg

  • 1 cup ricotta

  • 1/2 cup parmesan

  • 1 cup mozzarella

  • 2 cups marinara

  • 1 tablespoon Italian seasoning

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • fresh basil to serve

Directions

  • Preheat oven to 400 degree F.
  • Combine ricotta, parmesan, egg, Italian seasoning, salt and pepper together in a bowl. Set aside.
  • Pat the chicken with salt and pepper on both sides.
  • Cut chicken breast in half to form a “pocket”.
  • Place a spoonful of marinara in each chicken breast. Spread it evenly.
  • Spoon an even amount of lasagna stuffing in each of the chicken breasts.
  • Cover with the remaining marinara.
  • Sprinkle mozzarella on top.
  • Bake in the oven for 35 minutes until the chicken is cooked through and no longer pink
  • Serve with fresh basil and enjoy!

Notes

  • If you’re watching your carbs, read the label on your marinara to be sure it’s not high in added sugars. There should be around 7 grams of carbs per serving of marinara.
    Bake time will vary depending on how thick your chicken is, to be safe, cut through the center of your chicken to be sure it’s cooked all the way through (no longer pink).
