4medium applesHoneycrisp or Gala
½cupcrumbled feta cheese
¼cupdried cranberries
2tablespoonshoney
1tablespoonunsalted butterdivided
1teaspoonground cinnamon
½teaspoonvanilla extract
1tablespoonchopped fresh mintoptional, for garnish
Instructions
Preheat oven to 375°F (190°C) and lightly grease a baking dish.
Core apples, leaving ½ inch at the bottom.
Mix feta, cranberries, cinnamon, and vanilla in a bowl.
