Ingredients
2cupsfinely chopped broccoli floretssteamed until tender-crisp
1cupbreadcrumbsfor binding
1½cupsshredded cheddar cheese
⅓cupgrated Parmesan cheese
2eggsfor binding
2tbspall-purpose flour
½tspgarlic powder
½tsponion powder
Salt and pepper to taste
Cooking spray for greasing the baking sheet
Instructions
Preheat the oven to 400°F (200°C). Steam the broccoli for 3–5 minutes until tender-crisp, then finely chop.
In a large bowl, mix the broccoli with breadcrumbs, cheddar, Parmesan, eggs, flour, garlic and onion powder, salt, and pepper until the mixture holds together.
Roll into 1-inch balls, adding more breadcrumbs if needed. Arrange on a parchment-lined sheet, spray lightly with oil, and bake for 20–25 minutes until golden.
For extra crunch, broil for 1–2 minutes. Let cool slightly and serve warm with marinara or ranch dip.
