Ingredients
1sheet of puff pastrythawed
½cupbasil pesto
1cupshredded mozzarella cheese
¼cupgrated Parmesan cheese
1eggbeaten
Sea salt and freshly ground black pepper to taste
Cherry tomatoeshalved (for decoration)
Fresh basil leavesfor garnish
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out the puff pastry on a floured surface to a 12×16 inch rectangle.
Spread basil pesto over the pastry, leaving a 1-inch border. Sprinkle mozzarella and Parmesan on top.
Place another sheet of puff pastry on top and seal the edges. Cut into a Christmas tree shape and add branches.
Twist each branch to reveal layers of pesto and cheese.
Brush the tree with beaten egg and sprinkle with sea salt and black pepper.
Bake for 20–25 minutes or until golden brown and puffed. Cover with foil if the edges brown too quickly.
Cool slightly, then decorate with halved cherry tomatoes and fresh basil.
Serve warm as an appetizer or centerpiece for your holiday meal.
