Ingredients
1sheet of puff pastrythawed
½cupbasil pesto
1cupshredded mozzarella cheese
¼cupgrated Parmesan cheese
1eggbeaten
Sea salt and freshly ground black pepper to taste
Cherry tomatoeshalved (for decoration)
Fresh basil leavesfor garnish
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll puff pastry into a 12×16-inch rectangle on a floured surface, smoothing out creases.
Spread basil pesto evenly over the pastry, leaving a 1-inch border. Sprinkle mozzarella and Parmesan on top.
Place another sheet of puff pastry over the cheese mixture, pressing edges to seal. Cut the pastry into a Christmas tree shape, including branches for twisting.
Twist each branch gently to reveal the layers of pesto and cheese.
Brush with beaten egg and sprinkle with sea salt and black pepper.
Bake for 20–25 minutes, or until golden brown and puffed. Cover edges with foil if they brown too quickly.
After cooling slightly, decorate with cherry tomatoes and fresh basil leaves.
Serve warm as an appetizer, or enjoy at room temperature.
