Ingredients
4salmon fillets6 oz each, skinless
2cupsfresh spinach
½cupcream cheesesoftened
⅓cupgrated Parmesan cheese
2clovesgarlicminced
1tablespoonolive oil
1teaspoonpaprika
½teaspoongarlic powder
½teaspoononion powder
½teaspoonblack pepper
Salt to taste
Lemon wedges for serving
Instructions
Heat a skillet over medium heat and cook spinach for 2–3 minutes until wilted. Drain excess liquid, then mix with cream cheese, Parmesan, garlic, salt, and pepper until smooth.
Carefully cut a horizontal pocket in each salmon fillet without slicing through completely.
Spoon the spinach mixture into each salmon pocket evenly.
Mix paprika, garlic powder, onion powder, black pepper, and salt; rub over the tops of the fillets.
Heat olive oil in a skillet over medium-high heat and sear salmon 2–3 minutes per side until blackened and crispy.
Transfer to a 350°F (175°C) oven and bake 10–12 minutes until cooked through and flakes easily.
Plate and serve immediately with fresh lemon wedges.
