Blueberry Breakfast Quesadillas
These golden blueberry breakfast quesadillas are filled with a sweet cream cheese spread and fresh blueberries, then lightly crisped in a skillet. They’re quick, delicious, and perfect for breakfast, brunch, or a cozy snack.

For the Quesadillas:

large flour tortillas
8–10-inch size

softened

honey or maple syrup

ground cinnamon

fresh blueberries
or thawed frozen blueberries, well-drained

butter
for cooking or nonstick spray
Optional Garnishes & Toppings:
Powdered sugar
for dusting
Whipped cream
Greek yogurt or vanilla yogurt
Extra honey or maple syrup
Fresh mint leaves
Instructions
In a small bowl, mix softened cream cheese with honey (or maple syrup) and cinnamon until smooth, adjusting sweetness if needed.
Spread the mixture over half of each tortilla, sprinkle with blueberries, and fold into half-moon shapes.
Heat a skillet over medium, melt butter, and cook the quesadillas 2–3 minutes per side until golden and crisp.
Let rest briefly, then slice into wedges. Finish with powdered sugar, honey, or your favorite toppings like yogurt or whipped cream.
