1cupcottage cheese
2eggs
¼cupmaple syrup or honey
½teaspoonvanilla extract
½teaspooncinnamon
¼cupoat flour
¼teaspoonbaking powder
½cupfresh or frozen blueberries
Pinchof salt
Butter or oil for greasing
Instructions
Preheat the oven to 350°F and lightly grease a small baking dish, coating the bottom and sides evenly.
Whisk together the cottage cheese, eggs, maple syrup or honey, vanilla extract, and cinnamon in a mixing bowl until smooth.
Stir in the oat flour, baking powder, and a pinch of salt until the batter is fully combined and no dry spots remain.
Gently fold in the blueberries, being careful not to crush them.
Pour the batter into the prepared baking dish and spread it evenly.
