Ingredients
½poundground breakfast sausage
6large eggsbeaten
8slicesColby Jack cheese
4tablespoonssoft butterdivided
8slicessourdough bread
Instructions
Cook the sausage in a non stick skillet over medium heat for 6 to 8 minutes, breaking it up until no pink remains. Transfer to a bowl lined with paper towels and wipe the skillet clean.
Melt 2 tablespoons of butter in the skillet over medium high heat. Add the beaten eggs and gently stir as the edges set, cooking 2 to 3 minutes until softly scrambled. Remove from heat.
Discard the paper towels and gently mix the eggs into the sausage until combined. Wipe the skillet and return it to medium heat.
Butter one side of each slice of bread. Place one slice in the skillet, butter side down, top with cheese, about ½ cup sausage mixture, another slice of cheese, and a second slice of bread butter side up.
Cook 3 to 4 minutes per side until golden and the cheese is melted, lowering heat if needed.
Rest for 1 minute, slice if desired, and serve hot.
