Ingredients
For the Pasta
12ozpasta such as spaghettipenne, or linguine
2tablespoonsolive oil
1large yellow onionthinly sliced
3clovesgarlicminced
Salt and black pepper to taste
For the Chili Oil
3tablespoonsolive oil
1tablespoonred chili flakes
1teaspoonpaprika
1small garlic clovethinly sliced
1teaspoonsoy sauce
For Garnishing
Grated Parmesan cheese
Fresh basil or parsleychopped
Extra chili flakes optional
Instructions
Heat olive oil in a skillet, cook sliced onions with salt for 25–30 minutes until golden, add garlic in the last 5 minutes, and season with salt and pepper.
Warm olive oil in a saucepan, cook sliced garlic 1–2 minutes, stir in chili flakes and paprika, add soy sauce, and simmer briefly.
Cook pasta in salted boiling water until al dente, reserving 1 cup pasta water before draining.
Add the cooked pasta to the skillet with caramelized onions and toss to combine.
Drizzle chili oil over the pasta, tossing again and adding a little reserved pasta water if needed.
Serve topped with grated Parmesan, chopped basil or parsley, and extra chili flakes.
