Ingredients
2slicesback baconchopped, fat removed
3shallotsfinely diced
1carrotfinely diced
2small stalks celeryfinely diced
3clovesgarliccrushed
400g14oz extra lean beef mince
½tablespoondried mixed herbs
400g14oz canned chopped tomatoes
3tablespoonstomato paste
1tablespoonbalsamic vinegar
1teaspoongranulated sweetener or sugaroptional
240ml1 cup chicken or beef stock
500g17.5oz gnocchi
120g4.2oz mature cheddar, grated
Olive oil cooking spray
Salt and black pepper
Few fresh basil leavestorn
Instructions
Fry chopped bacon in a pan until golden, then set aside.
Sauté shallots, carrot, and celery until softened, adding water or stock if needed.
Add garlic and beef mince, cooking until browned.
Return bacon, stir in herbs, tomatoes, tomato paste, stock, sweetener, and balsamic; simmer 20 minutes.
Add gnocchi, cook 5–8 minutes until tender, adding stock if needed.
Season with salt and pepper.
Transfer to a baking dish, top with cheddar, and broil until bubbly.
