Ingredients
For the filling:
1lbsausagecasings removed if necessary
1tspgarlic powder
1tsponion powder
1tspsmoked paprika
¼tspred pepper flakesoptional
8large eggs
¼cupmilk or cream
Salt and pepper to taste
1tbspbutter
For the cheese blend:
1cupshredded cheddar cheese
1cupshredded Monterey Jack or mozzarella cheese
¼cupgrated Parmesanoptional
For assembly:
6–8 large flour tortillas
Optional: sautéed vegetablesbell peppers, onions, spinach or fresh herbs
Instructions
Heat a large skillet over medium-high heat. Add the sausage, breaking it apart with a spatula, and sprinkle in garlic powder, onion powder, smoked paprika, and red pepper flakes.
Cook 8–10 minutes, stirring occasionally, until browned and fully cooked. Drain on paper towels. If using pre-cooked links, chop and brown lightly for extra flavor.
Whisk eggs with milk or cream, and season with salt and pepper. Melt 1 tbsp butter in a nonstick skillet over medium heat, pour in the eggs, and cook slowly, stirring gently, until soft and fluffy. Remove from heat.
In a small bowl, combine cheddar, Monterey Jack (or mozzarella), and Parmesan cheese. Set aside.
Warm tortillas in a dry skillet or microwave for 15–20 seconds, then cover with foil or a towel to keep flexible.
Lay a tortilla flat, add scrambled eggs, top with sausage and cheese, and include optional vegetables or herbs if desired.
Fold in the sides and roll tightly from the bottom. Repeat with remaining tortillas and fillings.
