Ingredients
2boneless skinless chicken breasts
Salt and pepperto taste
1tbspolive oil
1avocadosliced
4slicesof cheeseSwiss, cheddar, or provolone
4slicesof breadsourdough, ciabatta, or your choice
2tbspmayonnaise
1tbspDijon mustard
1small red onionthinly sliced
1tomatosliced
Butter or olive oilfor grilling
Instructions
Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook 6–7 minutes per side until golden and cooked through. Let rest 5 minutes, then slice thinly.
Slice avocado, tomato, and red onion. Set aside cheese and bread.
Spread mayo and Dijon on each bread slice. Layer chicken, avocado, cheese, red onion, and tomato on two slices. Top with remaining bread, mayo side down.
Heat skillet with butter or olive oil. Cook sandwiches 3–4 minutes per side until golden and cheese melts, pressing gently.
Let sandwiches cool 1 minute, slice in half, and serve warm.
