Ingredients
1lbbonelessskinless chicken thighs
1tablespoonolive oil
2teaspoonsdried oregano
1teaspoongarlic powder
Salt and pepperto taste
4pita breads
1cupcherry tomatoeshalved
1cucumberdiced
1red onionthinly sliced
1cupplain Greek yogurt
½cupfeta cheesecrumbled
1tablespoonlemon juice
1clovegarlicminced
Fresh parsleyfor garnish
Instructions
In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs, coat well, and marinate for at least 30 minutes.
Heat a skillet or grill pan over medium-high heat. Cook chicken 5–7 minutes per side until golden and cooked through (165°F/75°C). Let rest 5 minutes, then slice into strips.
Mix Greek yogurt, crumbled feta, lemon juice, minced garlic, salt, and pepper until smooth for the tzatziki. Adjust seasoning to taste.
Warm pita bread. Spread tzatziki, add sliced chicken, cherry tomatoes, cucumber, and red onion. Garnish with parsley, roll, and serve warm.
