For the cheese base:
116 oz package cream cheese, softened
8ozMonterey Jack cheeseshredded
½packet taco seasoning
For the mix-ins:
½bunch fresh cilantrostems removed
2green onionsroughly chopped
2ozdiced green chile peppers
For garnish:
Remaining ½ bunch fresh cilantrofinely chopped
1medium Roma tomatocored and diced
2tbspfinely chopped white onion
1medium jalapeno pepperseeded and finely chopped
Instructions
Line a 16-ounce bowl with plastic wrap, leaving extra hanging over the edges. In a food processor, blend cream cheese, shredded Monterey Jack, and taco seasoning until smooth.
Add half the cilantro, green onions, and green chiles, pulsing a few times to incorporate while leaving flecks of green.
Transfer the mixture into the lined bowl, press gently to form a round shape, cover, and refrigerate at least 4 hours or overnight.
Once chilled, invert onto a serving platter, remove the plastic wrap, and use a shot glass or small spoon to create a hole in the center for the wreath shape.
Finely chop the remaining cilantro and sprinkle on top. Combine diced tomato, onion, and jalapeno, and arrange around the wreath for a colorful, festive garnish. Serve with crackers, tortilla chips, or fresh vegetables.
