Ingredients
For the Cake

large eggs

granulated sugar

teaspoon
vanilla extract

all-purpose flour

baking powder

teaspoon
salt
For the Whipped Cream Filling
1
cup
heavy whipping cream
2
tablespoons
powdered sugar
1
teaspoon
vanilla extract
Optional Garnish
Sprinkles or powdered sugar
Instructions
Preheat oven to 375°F (190°C) and line a 15×10-inch pan with parchment paper.
Beat eggs and sugar on high speed 5 minutes until thick and pale.
Mix in vanilla extract.
Whisk flour, baking powder, and salt in a separate bowl.
Fold dry ingredients into egg mixture carefully.
Pour batter into the pan and spread evenly.
Bake 15–20 minutes until golden and springy.
Cool 5 minutes in the pan.
Invert onto a powdered-sugar-dusted towel and remove parchment.
Roll cake gently in the towel; let cool completely.
Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
Unroll cooled cake and spread whipped cream evenly.
Re-roll cake tightly without the towel.
Wrap in plastic and refrigerate at least 30 minutes.
Slice and serve.
