Ingredients
4slicessourdough bread
2tablespoonsunsalted butter
1medium pearthinly sliced
1medium applethinly sliced
1medium onionthinly sliced
1cupshredded sharp cheddar cheese
1tablespoonbalsamic vinegar
Salt to taste
Black pepper to taste
Instructions
Caramelize the onions in 1 tbsp butter with a pinch of salt over medium heat for about 10 minutes, then add balsamic vinegar and cook 2–3 minutes more until deep golden. If they brown too fast, lower the heat.
Melt the remaining tablespoon of butter in the skillet over medium heat, making sure it coats the surface evenly for even toasting.
Assemble the sandwiches by layering cheddar, caramelized onions, thin apple and pear slices, then more cheddar between two slices of sourdough. Keep fruit slices thin so the cheese melts properly.
Grill the first sandwich for 4–5 minutes per side until the bread turns golden and crisp and the cheese melts fully. Flip when the edges look deep golden and the center feels warm.
Repeat with the second sandwich, adjusting the heat if the skillet becomes too hot to prevent burning.
Let both sandwiches rest for a minute, then slice and serve warm while the cheese is still melty.
