Ingredients
For the cod
21oz/ 600 g cod fillets
Salt and black pepper
For the coconut-lemon cream sauce
2tbspolive oil
1medium onion
1tbspgrated fresh ginger
2garlic cloves
1 ⅕cups/ 300 ml coconut milk
Juice and zest of 1 large lemon
Instructions
Preheat the oven to 350°F (180°C).
Season the cod with salt and black pepper.
Sauté onion in olive oil until soft, then add ginger and garlic. Stir in coconut milk, simmer, and add lemon juice and zest.
Place cod in a baking dish, pour the sauce over, and bake for 20–25 minutes until the fish flakes easily.
Let rest briefly, then serve with extra sauce over rice, couscous, or greens.
