3large sweet potatoespeeled and cut into wedges (about 600 g)
2tablespoonsolive oilplus extra for roasting
1medium oniondiced (about 150 g)
2clovesgarlicminced
1teaspoondried thymeplus extra sprigs for garnish
1teaspoondried rosemary
1teaspoondried basil
4cupsvegetable broth1 liter
1cupcoconut milk or heavy cream240 ml
Salt and pepper to taste
Instructions
Roast sweet potatoes at 400°F (200°C) for 25 to 30 minutes.
Sauté onion, garlic, and herbs in olive oil.
Add roasted sweet potatoes and broth, simmer 10 to 15 minutes.
Blend until smooth, stir in coconut milk or cream.
