Ingredients
1cupthick yogurtTurkish hoặc Greek
1handful fresh dillchopped
1handful fresh mint leaveschopped
½garlic cloveminced
2fresh eggs
1tablespoonvinegar
2oz55 g butter
1teaspoonchili flakes
½teaspoonsmoked paprika
Salt & pepper to taste
Instructions
Mix the yogurt with dill, mint, garlic, salt, and pepper until thick and creamy, then set aside.
Poach the eggs in gently simmering water with a splash of vinegar, slipping each egg into a small whirlpool and cooking about 3 minutes until the whites set and the yolks stay runny.
Melt the butter over low heat, add chili flakes and smoked paprika, and let it bubble briefly until aromatic and richly colored, then remove from heat.
Spread the herbed yogurt on a plate, top with the poached eggs, and spoon the warm spiced butter over everything; finish with extra herbs or black pepper.
