This crisp cucumber Caesar salad is a light, refreshing twist on the classic, combining crunchy cucumbers, savory bacon, Parmesan, and buttery toasted breadcrumbs.

16ouncesmini seedless cucumbers
1cupParmesan cheeseshaved
4ouncesbaconcooked and crumbled
½tablespoonsalted butter
¼cuppanko breadcrumbs
½cupCaesar dressingor to taste
Instructions
Melt ½ tablespoon butter in a small skillet over medium heat. Add panko breadcrumbs and stir until golden and crisp, about 3–5 minutes. Watch closely to prevent burning, then set aside to cool.
Slice cucumbers into thin ¼-inch rounds for an even, crisp bite.
Transfer cucumbers to a large bowl. Add ½ cup shaved Parmesan, ¼ cup crumbled bacon, and 2 tablespoons toasted breadcrumbs.
Pour in Caesar dressing and toss gently until evenly coated. Add more dressing a tablespoon at a time if needed.
Finish with extra Parmesan, bacon, and breadcrumbs on top. Serve right away while everything stays crisp.
