½cup50 g unsweetened cocoa powder
¾cup95 g all purpose flour
1cup200 g granulated sugar
½cup115 g unsalted butter, melted
2large eggsroom temperature
1teaspoonpeppermint extract

2ounces60 g cream cheese, softened
½cup60 g powdered sugar
a few drops green food coloringoptional
2tablespoonscrushed mint candies or Andes mints
½teaspoonvanilla extract
Instructions
Preheat the oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
Sift and whisk the cocoa powder, flour, baking powder, and salt until evenly combined.
Whisk the sugar and melted butter, then add the eggs one at a time until smooth.
Stir in the peppermint extract and vanilla extract, measuring carefully.
Gently fold the dry ingredients into the wet mixture until thick and glossy.
Beat the cream cheese, powdered sugar, and food coloring until smooth.
Layer the batter and cream cheese mixture in the pan, swirling gently.
Sprinkle with crushed mint candies, bake for 25 to 30 minutes, then cool completely before cutting.
