2cupscottage cheese
3large eggs
1large applepeeled and finely diced
½cuprolled oats or almond flour
¼cupmaple syrup or honey
1½teaspoonsground cinnamon
1teaspoonvanilla extract
1teaspoonbaking powder
Instructions
Preheat oven to 350°F (175°C), grease a 9×9‑inch dish.
Whisk cottage cheese, eggs, maple syrup or honey, and vanilla until smooth.
Stir in oats or almond flour, cinnamon, and baking powder.
Fold in diced apples evenly.
Pour into the dish, smooth the top, and bake 35–40 minutes until golden and a toothpick comes out clean.
