1bag16 ounces coleslaw mix
1can15 ounces black beans, rinsed and drained
1 ½cupscanned corn kernelsdrained
1medium jalapeño pepperseeded and finely diced
1small red bell pepperseeded and finely diced
3green onionsfinely sliced
¼cupfresh cilantrofinely chopped
1tablespoontaco seasoning
½teaspoonground cumin
1bag9.75 ounces Chili Cheese Fritos (reserve a handful for topping)
For the Chipotle Dressing
½cupsour cream
½cupmayonnaise
¼cupfresh lime juiceabout 2 limes
2tablespoonschipotle sauce from canned chipotles in adobojust the sauce
Instructions
Prep the salad base: Mix the coleslaw, beans, corn, jalapeño, bell pepper, green onions, cilantro, taco seasoning, and cumin.
Make the chipotle dressing: Whisk sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
Dress the cabbage mix: Pour dressing over the slaw and mix in most of the Fritos.
Add the final crunch: Top with the remaining Fritos before serving.
