2cupsrotisserie chickenshredded
¼lbsalami or soppressatadiced
¼lbpepperonidiced
¼cupprovolonethick-sliced and diced
¼cupcrumbled feta
⅔cupgrape tomatoesdiced
⅓cupmild banana peppers
½red onionthinly sliced or diced
Dressing
½cupmayonnaise
¼cupgrated parmesan
3tbspred wine vinegar
1 to 2tbspbanana pepper juiceto taste
1tsporegano
1tspgarlic powder
Freshly cracked pepper
Saltabout ¼ tsp or to taste
Instructions
Whisk all dressing ingredients until smooth, then taste and adjust seasoning.
Combine chicken, cured meats, cheeses, tomatoes, banana peppers, and red onion in a large bowl.
Add most of the dressing and toss well, adding more if needed.
