Ingredients
For the Cookies
1½cups188 g all-purpose flour
½cup40 g Dutch process cocoa powder
½teaspoonsalt
½teaspoonbaking powder
¾cup168 g unsalted butter, softened
¾cup165 g light brown sugar, packed
¼cup50 g granulated sugar
2egg yolksroom temperature
1½teaspoonsvanilla bean paste or extract
For the Ganache
1cup200 g semi-sweet chocolate chips
½cup120 ml heavy cream
Nonpareilsoptional
Instructions
Mix dry ingredients. Cream butter and sugars, then add yolks and vanilla.
Add dry mix. Roll dough into balls, indent centers, and chill 1 hour.
Bake at 350°F for 9–11 mins. Re-indent while warm. Cool on rack.
Heat cream, pour over chocolate, stir smooth.
Fill cookies with ganache. Add sprinkles. Chill to set.
