Ingredients

Fresh vegetables or bread

Instructions
Preheat oven to 400°F (200°C).
Slice garlic tops, drizzle with 1 tbsp olive oil, and wrap in foil.
Roast garlic 30–35 minutes until soft and golden; cool slightly.
Mix goat cheese, cream cheese, sour cream, and remaining olive oil.
Squeeze roasted garlic into the cheese mixture.
Add thyme, salt, and pepper; stir to combine.
Blend until smooth and creamy.
Transfer to a dish and smooth the top; garnish if desired.
Serve warm or at room temperature with veggies, crackers, or bread.
