Ingredients
1poundground sausagepork, chicken, or turkey
2large onionsthinly sliced
2tablespoonsolive oil
1teaspoonfresh thymeor ½ teaspoon dried
Salt and pepper to taste
1package puff pastry2 sheets, thawed
1eggbeaten (for egg wash)
Optional: ½ cup grated Gruyère cheese
Optional: 1 tablespoon Dijon mustard
Instructions
Heat olive oil in a skillet over medium heat. Add sliced onions with a pinch of salt and cook slowly, stirring occasionally, until golden brown and soft, about 15–20 minutes. Remove from heat and let cool slightly.
In a bowl, combine ground sausage, caramelized onions, thyme, salt, and pepper. If desired, mix in Gruyère cheese and Dijon mustard until evenly incorporated.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Roll out puff pastry on a floured surface and cut into 4×6-inch rectangles. Place a spoonful of filling on each, fold over, and seal edges with a fork. Brush tops with beaten egg for a glossy finish.
Place rolls on the prepared sheet and bake 20–25 minutes until golden brown and puffed. Let cool slightly before serving.
