Ingredients
For the Salad
1bag16 ounces coleslaw mix
1can15 ounces black beans, rinsed and drained
1½cupscanned corn kernelsdrained
1medium jalapeño pepperseeded and finely diced
1small red bell pepperseeded and finely diced
3green onionsfinely sliced
¼cupfresh cilantrofinely chopped
1tablespoontaco seasoning
½teaspoonground cumin
1bag9.75 ounces Chili Cheese Fritos, reserving a handful for topping
For the Chipotle Dressing
½cupsour cream
½cupmayonnaise
¼cupfresh lime juiceabout 2 limes
2tablespoonschipotle sauce from canned chipotles in adobojust the sauce
Instructions
In a large bowl, toss together coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin until evenly coated.
In another bowl, whisk sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
Pour the dressing over the salad and mix until everything is well combined.
Gently fold in most of the Chili Cheese Fritos, saving a handful for topping.
Transfer to a serving bowl, scatter the remaining Fritos on top, and serve right away for the best crunch.
