Peel the bananas and cut each in half lengthwise, then divide each half into two pieces to get 8 slices. Arrange them on a parchment-lined baking sheet.
Spread ½ tbsp peanut butter on each slice, ensuring even coverage. Sprinkle with a pinch of sea salt and 1 tsp chopped peanuts.
In a microwave-safe bowl, combine 4–5 tbsp dark chocolate with ¼ tsp coconut oil. Microwave in 30-second intervals, stirring between, until smooth and melted.
Drizzle the melted chocolate over each banana slice, creating a light, even layer. Freeze on the baking sheet for at least 1 hour until firm.
Use a spatula to lift the frozen banana bites. Serve immediately or store in an airtight container in the freezer for up to a week.
