For the Pork Bites:
1 ½poundspork tenderloin or pork loincut into 1-inch cubes
2tablespoonsolive oilor avocado oil
1teaspoonsaltadjust to taste
½teaspoonfreshly ground black pepper
1teaspoonsmoked paprika
1teaspoongarlic powder
½teaspoononion powder
For the Garlic Butter Sauce:
4tablespoonsunsalted butter
5clovesgarlicminced (add more if you love garlic)
½teaspoonred pepper flakesoptional, for heat
2tablespoonsfresh parsleychopped
1teaspoonlemon juiceoptional, for brightness
Instructions
Trim and cut pork into 1-inch cubes. Pat dry. Season with salt, pepper, smoked paprika, garlic powder, and onion powder.
Heat oil in a skillet. Sear pork in a single layer 2–3 minutes per side until golden. Remove and set aside.
Melt butter in the skillet. Add garlic and cook 30–60 seconds. Stir in red pepper flakes and lemon juice.
Return pork to skillet, toss in sauce, and cook 2–3 minutes until 145°F. Garnish with parsley and serve.
