For the pomegranate mousse
1cuppomegranate juice
2tablespoonssugar
1teaspoongelatin powder
1cupheavy creamwhipped to soft peaks
For the sponge base
½cupflour
¼cupsugar
2large eggs
2tablespoonsmelted butter
½teaspoonvanilla extract
For the mirror glaze
½cuppomegranate juice
½cupsugar
½cupwhite chocolatechopped
1tablespooncorn syrup or glucose
½tablespoongelatin powder
2tablespoonswater
Instructions
Bake sponge at 350°F for 8–10 mins, cool, cut circles.
Mix juice, sugar, gelatin; cool, fold into whipped cream. Fill molds, add sponge, freeze 4 hrs.
Heat juice, sugar, syrup; stir in chocolate and gelatin. Cool glaze to 95°F.
