Ingredients
For the Pomegranate Mousse
1cuppomegranate juice
2tablespoonssugar
1teaspoongelatin powder
1cupheavy creamwhipped to soft peaks
For the Sponge Base
½cupall purpose flour
¼cupsugar
2large eggs
2tablespoonsmelted butter
½teaspoonvanilla extract
For the Mirror Glaze
½cuppomegranate juice
½cupsugar
½cupwhite chocolatechopped
1tablespooncorn syrup or glucose
½tablespoongelatin powder
2tablespoonswater
Instructions
Bake thin sponge at 350°F 175°C, cool, and cut circles.
Bloom gelatin, warm pomegranate juice with sugar, dissolve gelatin, then fold into whipped cream.
Fill dome molds with mousse, add sponge, and freeze until firm.
Heat pomegranate juice with sugar and corn syrup, melt in white chocolate, add gelatin, and cool glaze to 95°F 35°C.
Glaze frozen domes and chill 1 hour before serving.
