Ingredients

medium yellow squash or zucchini
thinly sliced

Black pepper

Instructions
Preheat to 425°F (220°C).
Line with parchment and lightly brush with olive oil.
Place slices in a single layer without overlapping.
Drizzle with olive oil, sprinkle salt, pepper, and Parmesan, pressing lightly.
Roast 15 minutes until edges are crisp and cheese is golden.
Transfer to a platter and serve warm.
