These decadent Healthy Date Candy Bars combine soft Medjool dates, creamy peanut butter, crunchy pretzels, and rich dark chocolate into a naturally sweet treat that tastes indulgent while using wholesome ingredients.

8large soft Medjool dates
½cupcreamy peanut butter
2tablespoonspure maple syrupoptional
¼cupcrushed pretzels
20whole pretzels
1cupdark chocolate chips
1½tablespoonscoconut oil
Instructions
Soak soft or firm dates in warm water for 10 minutes if needed, then drain well. Soft dates blend into a smoother, caramel-like filling.
Blend the dates, peanut butter, and maple syrup in a food processor until thick and sticky. Gently fold in the crushed pretzels, leaving small crunchy bits throughout. If the mixture feels dry, add a little extra peanut butter.
Arrange whole pretzels on a tray and spoon about 1 tablespoon of filling onto each one. Spread gently into small bar shapes so the filling stays balanced on top.
Freeze the bars for 10–15 minutes to help them firm up before dipping.
Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl or double boiler, stirring often until smooth and glossy. Avoid overheating, or the chocolate may turn grainy.
Dip each chilled bar into the melted chocolate until fully coated. Place them pretzel-side down on parchment paper and drizzle extra chocolate over the tops if desired.
Freeze the bars for about 1 hour until the chocolate shell is firm. The outside should have a light snap while the center stays soft and chewy.
