1cuprolled oats
1teaspoonground cinnamon
½teaspoonbaking soda
½teaspoonbaking powder
1large applepeeled and chopped
3tablespoonshoney
1teaspoonvanilla extract
3tablespoonsplain yogurt
2large eggs
1tablespoonunsalted butter or coconut oil
Instructions
Preheat the oven to 350°F. Line a small baking pan with parchment paper and lightly grease it with butter or coconut oil.
Set aside ¼ cup rolled oats. Blend the remaining oats with cinnamon, baking soda, baking powder, chopped apple, honey, vanilla, yogurt, eggs, and butter or coconut oil until smooth.
Gently fold the reserved oats into the batter to add texture.
Pour the batter into the prepared pan and smooth the surface evenly.
Bake on the center rack for 20 to 30 minutes, checking at 20 minutes with a toothpick for doneness.
Let the cake cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely.
