1tablespoonolive oil
1oniondiced
½teaspoonkosher salt
2tablespoonsminced garlic
1tablespoontomato paste
2teaspoonsdried basil
1tablespoonsugar
2cans28 oz each whole canned tomatoes, with liquid
3cupslow-sodium vegetable broth
1½cups2% cottage cheese
Pepperto taste
Optional: grated parmesan and fresh basil for garnish
Instructions
Heat oil, cook onions until soft, then add garlic and sauté briefly.
Stir in salt, tomato paste, basil, sugar, and deglaze with broth if needed.
