2cupsfull-fat cottage cheese
3large eggs
½cupalmond flour
¼cuphoney or maple syrupor sugar-free alternative
1teaspoonvanilla extract
1teaspoonlemon zest
1teaspoonbaking powder
2cupsmixed berriesfresh or frozen
Instructions
Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9 dish.
Blend cottage cheese and eggs until smooth.
Stir in almond flour, sweetener, vanilla, lemon zest, and baking powder.
Gently fold in mixed berries (frozen is fine).
Pour batter into the dish and spread evenly.
Bake 35–40 minutes, until golden and set with a slight jiggle.
