Ingredients
For the Meximelts
1lbground beeflean preferred
1packet taco seasoningplus water per package directions
8soft taco-size flour tortillas
2cupsMexican shredded cheese blendMonterey Jack, cheddar, etc.
1cuppico de gallo
Pico de Gallo Ingredients
2medium tomatoeschopped
½medium onionfinely chopped
2tbsplime juice
½tspsalt
¼cupfresh cilantrochopped
1jalapeñominced (seeds removed for less heat)
Instructions
Mix tomatoes, onion, lime juice, salt, cilantro, and jalapeño. Chill.
Brown beef in a skillet. Add taco seasoning and water; simmer 5 minutes.
Microwave tortillas in a towel for 20 seconds.
Add cheese, beef, and pico to each tortilla.
Roll up, wrap in a damp paper towel, and microwave 20 seconds.
