1cupcornmeal
1cupall-purpose flour
¼cupsugar
1tablespoonbaking powder
½teaspoonsalt
½cupbuttermelted
¼cuphoney
1cupbuttermilk
2eggs
Instructions
Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin.
In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk melted butter, honey, buttermilk, and eggs until smooth, then pour into the dry ingredients.
Stir gently until just combined. Spoon batter into muffin cups, filling about three-quarters full.
Bake for 12–15 minutes until golden and a toothpick comes out clean. Cool slightly before serving warm with honey or butter.
