½cupcottage cheese
1large egg
1small applefinely diced
¼cupoat flouror blended oats
1tbsphoney or maple syrup
½tspcinnamon
¼tspnutmegoptional
½tspbaking powder
1tspvanilla extract

Instructions
Preheat the oven to 350°F (175°C) and grease a mini muffin tin or line it with paper cups.
In a blender, blend cottage cheese, egg, honey, and vanilla until smooth and creamy.
In a separate bowl, whisk together oat flour, cinnamon, nutmeg, baking powder, and salt.
Pour the wet mixture into the dry ingredients and stir gently until combined. Fold in the diced apple pieces.
Spoon the batter into the muffin tin, filling each cup about three-quarters full. Bake for 15–18 minutes, until the tops are golden and a toothpick inserted in the center comes out clean.
Let the bites cool for 5–10 minutes before removing from the pan. Enjoy warm or at room temperature.
