Ingredients
For the Bread
1medium overripe banana
2large eggs
¼cupwater
2teaspoonsvanilla extractdivided
½cupvegetable oil
⅓cupgranulated sugar
2cupsKrusteaz Pancake Mix
1cupchopped strawberries
For the Glaze
¾cuppowdered sugar
⅛teaspoonstrawberry extract
2 to 3tablespoonsheavy whipping cream
1 to 2drops red food coloringoptional
Instructions
Preheat the oven to 350°F and grease a 9×5 inch loaf pan.
Mash the banana until mostly smooth.
Stir in eggs, water, vanilla, and oil.
Mix in sugar and pancake mix just until combined.
Fold in strawberries and pour batter into the pan.
Bake 40 to 50 minutes until a toothpick comes out clean.
