Ingredients
1ripe peachpeeled and diced (or ½ cup peach purée)
2tbsphoney
1tbspDijon mustard
¼cupbalsamic vinegar
½cupolive oil
½tspsalt
¼tspblack pepper
½tspgarlic powderoptional
½tspdried thyme or 1 tsp fresh thymeoptional
Instructions
Add peach, honey, Dijon mustard, balsamic vinegar, salt, black pepper, and garlic powder (if using) to a blender and blend until smooth.
With the blender on low, slowly drizzle in olive oil until the vinaigrette is creamy and well combined.
Taste and adjust seasoning. Add more honey for sweetness or balsamic for tang.
Use immediately or store in an airtight jar in the refrigerator for up to 1 week. Shake before each use.
