2poundsboneless skinless chicken breasts
2tablespoonsolive oil
1½teaspoonsground cumin
1½teaspoonspaprika
1teaspoongarlic powder
1teaspoonfine salt
½teaspoonblack pepper
Cilantro Lime Rice
1½cupslong grain white rice
2½cupswater or low sodium chicken broth
1tablespoonbutter or olive oil
½teaspoonfine salt
½cupfresh cilantrofinely chopped
2tablespoonsfresh lime juice

Instructions
Blend all aji verde ingredients until mostly smooth with small green flecks, then refrigerate to allow the flavors to develop.
Season the chicken, cook over medium high heat until golden and fully cooked, then rest briefly before slicing.
Cook the rice until tender, let it rest, then fold in cilantro and fresh lime juice.
