2cupscooked jasmine rice
1cupdiced chicken breast
1cupdiced pineapple
½cupdiced carrots
½cuppeas
½cupdiced bell peppers
3clovesgarlicminced
2tablespoonssoy sauce
1tablespoonfish sauce
1tablespoonoyster sauce
1tablespoonvegetable oil
Salt and pepper to taste
Instructions
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium heat. Add diced chicken and cook until no longer pink, about 5–6 minutes. Remove and set aside.
In the same skillet, sauté garlic for 30 seconds until fragrant. Add carrots, peas, and bell peppers. Cook 4–5 minutes, stirring often, until tender.
Push vegetables to one side and add jasmine rice to the other, breaking up clumps. Stir together until well mixed.
Stir in pineapple and cook 2–3 minutes, letting the sweetness blend with the savory flavors.
Whisk soy sauce, fish sauce, and oyster sauce in a small bowl. Pour over the rice mixture and toss until evenly coated. Season with salt and pepper.
Return chicken to the skillet and stir well. Cook 2–3 minutes until heated through.
Transfer to a dish, or serve in a hollowed pineapple shell for a festive touch.
