Instructions
Preheat oven to 190°C and cook ground beef in a skillet over medium high heat until browned, breaking it apart.
Add onion, bell pepper, and chopped pepperoni, cooking 5 to 7 minutes until softened and fragrant.
Stir in garlic and cook 2 minutes until aromatic, then remove from heat.
Mix in pizza sauce, Italian seasoning, ricotta, mozzarella, and bacon until creamy and combined.
Fill tortillas with mixture, roll tightly, and place seam side down in a greased baking dish.
Pour remaining sauce over, sprinkle mozzarella, add pepperoni slices and bacon.
Bake 20 to 25 minutes until cheese is melted and edges lightly golden, then rest 5 minutes before serving.
