For the Pastry:
1 ½cupswhole wheat flour
½cupvanilla protein powder
1tablespoonsugar
2teaspoonsbaking powder
¼cupapplesauce
¼cupneutral-flavored oil
1teaspoonvanilla extract

½cupstrawberry jam
For the Glaze:
1cupconfectioners sugarsugar-free or regular
1cupvanilla protein powderoptional
2tablespoonsmilk or wateras needed
½teaspoonvanilla extract
Instructions
Preheat the oven to 170°C/325°F and line a baking tray with parchment paper. Whisk together whole wheat flour, protein powder, sugar, and baking powder.
In another bowl, mix applesauce, oil, and vanilla until smooth. Combine wet and dry ingredients to form a soft dough, adding a little cold water if needed. Wrap and chill for 15 minutes.
Roll out half the dough between parchment sheets to about ⅛ inch thick and cut into rectangles. Repeat with the remaining dough.
Spoon strawberry jam in the center of each piece, leaving the edges clear. Top with another rectangle and crimp the edges with a fork to seal.
Bake for 10–15 minutes until lightly golden, then cool on a wire rack. For the glaze, mix confectioners sugar, protein powder, milk or water, and vanilla until smooth. Spread over cooled pop tarts and let set before serving.
