Ingredients
For the Crus
1½cupsgraham cracker crumbs about 12–14 crackers
5tablespoonsunsalted butter melted
For the Blueberry Chia Filling
2cupsfresh or thawed blueberries
3–4 tablespoons chia seeds
¼ to ½cupgranulated sugar honey, or maple syrup (adjust to taste)
1cupfull-fat Greek yogurt or cream cheese softened
2tablespoonslemon juice
1teaspoonvanilla extract
Pinchof salt

Fresh blueberries
Lemon zest
Mint leaves
Instructions
Crush crackers, mix with melted butter, press into a 9‑inch pie dish, and chill 15 minutes.
Mash or blend blueberries, mix with chia, sweetener, lemon, vanilla, salt, then fold in yogurt/cream cheese; rest 5–10 minutes.
Spread filling over chilled crust and refrigerate 2 hours or overnight.
Garnish with blueberries, lemon zest, or mint; slice with a warm knife and serve cold.
