Ingredients
1½cupsgraham cracker crumbsabout 10 full sheets
1cupshelled pecans
½cupconfectioners’ sugar
2tablespoonsunsweetened cocoa powder
2tablespoonshoney
¼cupcoconut rum
1cupsweetened shredded coconut
2teaspoonsorange zest
1teaspoonpure vanilla extract
10ouncessemi sweet or bittersweet chocolatecoarsely chopped
Instructions
Toast pecans at 300°F 150°C until fragrant, cool, and finely chop.
Mix crumbs, pecans, sugar, cocoa, honey, rum, coconut, zest, and vanilla until sticky.
Chill the mixture until firm.
Melt chocolate until smooth and let cool slightly.
Roll mixture into small balls, dip in chocolate, and place on lined tray.
