For the Sweet Potato Rounds
2 to 3medium sweet potatoessliced into ⅓-inch rounds
2 to 3tablespoonsolive oil
½teaspooncinnamon
1teaspoonsmoked paprika
½teaspooncumin
½teaspooncoriander
¼teaspoonred pepper flakes
1teaspoonkosher salt
½teaspoonblack pepper
2 to 3tablespoonshoneyregular or hot honey
For the Topping
½cupcrumbled feta cheese
2tablespoonschopped fresh chives or parsley
Instructions
Preheat oven to 425°F and prepare a large rimmed sheet tray.
Wash, dry, and slice sweet potatoes into ⅓-inch rounds.
Coat the slices in olive oil, season with spices, and drizzle with honey.
Roast 20 minutes, flip, then roast 20–25 minutes more until golden and crisp at the edges.
Plate the rounds, add salt, honey, feta, and herbs, and serve warm.
